A long tradition in making milk products durable, refining them for different occasions and also refining their taste by small tweaks led to an immense variety of cheeses over time. Switzerland's cheeses are at a first glance famous for their holes, made by bacteria gases while the wheel of cheese is ripening. But it's not always about the holes – most of the smooth blocks of Swiss cheese don't have it actually. It's more about the quality of ingredients, the procedure and the passion to make a refined cheese. Swiss Cheese dishes are simple dishes. Established in the rural and rough environment of the alps, made for hard working people. Therefore, some of those dishes might feel a bit heavy. Especially if the cheeses are melted over the heat of fire, eaten with a lot of carbs and maybe a sip of white wine or even high percentage schnaps.  But it's always about the quantity and the side dishes. You can easily enjoy those meals with some cup of tea, vegetables and fruits. However, cheese dishes are always contributing to this unique & cozy feel in a hut covered by a meter of snow.
